You know how sometimes you just want a refreshing cocktail at the end of the day? Just relaxing on the patio, with a beautiful drink, sparkling conversation, and waiting for something amazing to finish cooking in the oven… It’s basically a perfect picture. However, living in an apartment complex right off the freeway with a tiny kitchen doesn’t really lend itself to such a magical evening. But that doesn’t mean I can’t enjoy the cocktail anyway!
Depending on what kind of alcohol you choose to go with, is definitely going to change how the final product tastes. Don’t worry though – they’re all delicious. Want something a little more herbal? Choose gin. Feeling like you need a tropical vacation? Rum all the way. Margarita fan? Tequila with agave instead of syrup. There really isn’t a wrong way to make it! And let’s be honest – you can totally indulge and not feel guilty about it because of the chia seeds. It’s “healthy”, right?
This little minx of a cocktail really isn’t hard at all – throw the alcohol, simple syrup, and juice into a glass, mix it, top it with club soda and chia, and just let your stresses melt away while you enjoy watching the sunset from a gorgeous patio around a fire pit. I’ve even noticed that the freeway sounds can sometimes be soothing. Sometimes.

Pink Lady
- 1 1/2 oz gin, vodka, tequila or white rum
- 1/2 oz simple syrup or agave
- 2 oz blood orange juice
- 4 oz club soda
- 1 tsp chia seeds
- Orange twist to garnish, if desired
Place alcohol, syrup, and juice into a shaker with ice. Seal tightly and shake for 15 seconds to combine thoroughly. Strain over ice in a Collins or highball glass. Top with club soda and give it a gentle stir. Garnish by sprinkling chia seeds over the top, and also with an orange twist
